
The study of knowledge of food hygiene and safety of 200 waiters and waitresses at canteens of businesses in Hai Duong province. Results showed that the correct recognition ratio of a safe and fresh food is quite low (with meat: 42.5 percent; fish: 51.0 percent; vegetables: 71.0 percent), only 46.0 percent waiters and waitresses correctly and sufficiently recognize all the signs of food poisoning; 64.5 percent waiters and waitresses identify the causes of food poisoning; there are 48.0 percent waiters and waitresses can not gain knowledge about the food safety processing steps; 45.5 percent there is no gain knowledge about the hygiene standards of canteens; Only 58 percent has correctly understanding the health regulations of waiters and waitresses at canteens.
